Sunday Smoothie Series – Watermelon, Strawberry and Mint

It’s been a few weeks in between these, but this one is worth the wait, I promise! I always have watermelon in the fridge because my daughter likes it, but I found myself often throwing the last chunk of it away because it had gone soft and mooshy by the end of the week. So I decided that I needed to stop chucking it in the bin and get some use out of the last part before it turned. This is the result:

I’ve made this about three times in the past week, and I think I’ve perfected it!

Watermelon, Strawberry and Mint Refreshing Smoothie
Two or three thick slices of watermelon, chopped up, seeds removed (my slices come from a quarter piece of a whole melon)
A few strawberries, hulled and halved
One kiwi fruit, peeled and sliced
200 grams of your favourite yoghurt
A quarter of a cup of your favourite milk (optional)
Four or five mint leaves

Puree the watermelon, strawberries and kiwi first, making sure you get them as liquified as possible. Add the yoghurt, milk and mint leaves and blend until well combined. Serve and enjoy!

I want to note that I’ve made this with two or three strawberries, and with four or five strawberries, and I much prefer it with the smaller amount of berries. The more strawberries in it, the more that flavour overtakes the watermelon flavour, which is what I wanted to taste more than the berries. I think it would also be nice without the berries all together, the watermelon and kiwi would really compliment each other on their own.

This smoothie has been an absolute winner in our house this week, to the point where my daughter has asked me to make “pink juice” almost every day since I first made it last weekend! I mean, look at those colours! The mint is so refreshing, it was a last minute brainwave I thought of two days ago and it really steps the flavour up a notch. Hope you like it as much as I do!
